Last Weekend of Summer

These pictures were from a couple weeks ago when it was about 30 degrees warmer outside! Whoever doesn't know about Utah's weather... it can change dramatically in just a couple of hours. It has been freezing the last couple of days. We have had a great time with the warm weather though and we took full advantage of wearing shorts, t-shirts, and flip flops! 
My cousin, Jackie got married a couple of weeks ago to Jimmy. They make such a cute couple and I couldn't be more happy for her! Here is a picture with the beautiful bride and cute baby Davis.

Anyway, last weekend, Ashely, who is the closest thing I have had as a sister while growing up came to stay with us. Her grandpa Reid, who is the only grandpa I knew growing up isn't doing very well. He is the greatest guy and the nicest, lovable grandpa. Growing up my brothers and I would always go over to their house because they lived next to us. If my parents couldn't ever find us they would always head over to Reid and Sharon's house. Or if it was Chase saying their names it was Reid and Reid. These two people are the greatest people you will ever meet and are so special. I am so grateful that I have them as "grandparents." They are not grandparents by blood but they are close enough to be and have always called them that. I hope everyone has someone like these two in there lives because I look at all the times I have had with them and wouldn't trade it for anything. 




Ashley was only here for a few days. She is married to a great guy and they have the most beautiful little girl! She is the perfect baby and has the cutest personality. We got to babysit her a few different times while Ashley and James were at the hospital. They came out for my wedding and it is crazy to see how much she has grown in just 4 months. I guess 2 months old and 6 months old is a big difference though right? It made up for a good weekend and I cannot wait to see them again.

Healthy Banana Bread

Who doesn't love a good banana bread recipe? This is even better because it is a healthy banana bread recipe and tastes just as good as the others. I got this recipe a few years ago and make it all time. I made it one day while my brothers friends were over thinking that they won't eat it because it is healthy, and boy I was wrong. They LOVED it. One of them loved it so much that he would ask me if he went and bought the stuff if I would make it for him. This recipe is great for everyone and is super simple. 

Healthy Banana Bread

In a mixing bowl combine,
4 ripe bananas
1/4 Cup Milk (I use skim)
1/4 Cup Sour Cream (I use light)
1 Egg

Mix together until blended, then in another bowl combine

3/4 Cup Splenda
1/2 Cup White Flour
1 1/2 Cup Wheat Flour
1 t. Salt
1 t. Baking Soda

Add dry ingredients together with wet ingredients. 
Mix for about 1 minute until all dry ingredients are mixed in well.
Get a bread pan and spray with pam and add flour around the edges
Add in bread batter.

Bake at 350 degrees for 50-60 minutes.

I usually always double mine when I make it because they disappear so fast! I hope you like this recipe. Let me know what you think!

Army Pants

I live in Utah and everyone that lives in Utah knows how the weather works here. One day it will be nice and warm and the next day it will be a raining/snowing. Thats the joys of living in Utah, you never know what it is going to be. So today it is one of those days that it is in between warm and cold so I thought the perfect outfit would be my army pants. I bought these pants years ago and they are still my go-to pants. Who doesn't love army pants right??  I love that you can wear whatever color you want with them and it will be a cute outfit. Also my other outfit was from the other day when it was a little bit warmer outside as you can tell. I love a simple pair of jeans/capris with a white shirt. Nothing gets more simple and clean as that. I hope you enjoy!

"No Fry" Fried Ice Cream

I don't know about you but when I hear fried ice cream, I am always in the mood for it. Fried ice cream is by far one of my favorite desserts. This is one treat that I never really wanted to find out what it was made with and how many calories were involved because I knew it would totally ruin it for me. But that whole mind set changed when I decided that I wanted to make it for a birthday dinner. I looked up multiple different recipes on pinterest trying to find the perfect one. I kept running into the problem of not finding any that were really fried. Every recipe called for boiling the ingredients and then rolling the ice cream over the cereal mix. Let me tell you, I felt so much better knowing that I wouldn't have to fry them. But why would they call it Fried Ice Cream if they really aren't frying it?? I will be changing that. So anyways, I chose this recipe and then decided instead of making it into a pan I wanted each person to have their own "baked" fried ice cream. I also changed somethings up to make it the way thought would taste the very best. So here it is. Enjoy! 

"No Fry" Fried Ice Cream


1/2 cup butter (1 stick)
1 cup sugar
1/2 teaspoon salt
3 cups crushed cornflakes
1 1.75-quart container vanilla ice cream (I used vanilla bean) 
3/4 teaspoon cinnamon
Caramel, Hot Fudge, Anything else you would like to use. 

Set ice cream out to soften up at room temperature for about 30 minutes. You want to be able to slide a butter knife into it without too much resistance. Make the ice cream into tennis ball shaped balls and place the number that you want onto the cookie sheet and place into freeze until hardened. 

Meanwhile, melt butter in a large skillet over medium-high heat then add sugar and salt.  Stir and continue cooking until the sugar is thoroughly incorporated into the butter and the mixture starts to bubble (about 2-3 minutes).  Add cornflakes and continue cooking, constantly stirring, for 5-6 minutes or until the cornflakes are slightly caramelized and browned.  Be careful not to cook too long or the sugar will burn. (I added the cinnamon in right after I added the mixture to the cereal and so that it had a stronger taste but you can add it whenever you want.)

Once the ice cream is hard enough and the cereal mix isn't to hot, roll the cereal around the ice cream ball and make sure you cover the ice cream completely. 

 After you have rolled the cereal mixture all around the ice cream, place and on baking sheet and return them to freeze for 4 hours before serving. (The longer you wait the better it will taste)

Drizzle whatever toppings you choose on the top before serving.

Wedding Day

 Before I got married, people told me all the time to enjoy the day because it will be the best day of my life and it goes by so quickly. Well, they were all right. May 16, 2013 was the best day ever and a day that I will never forget. Tony and I got married in the Salt Lake City temple and following that we had a reception in Layton. We had our wedding dinner at Maddox with all of our closest friends and family. Everything went better than what we had planned for. If I could go back and live one day again, I would choose my wedding day because it was that perfect of a day. I loved planning everything from day one all the way up to the day.
